abstract This invention is intended to produce a large amount of 20 (S) -ginsenoside Rh 2 in a trace amount of 0.001% only in red ginseng. The preparation of 20 (S) -gincenoside Rh 2 consists of reacting the ginsenoside Rg 3 with an enzyme selected from the enzyme Nalinase or Zeta-beta-Galactosidase in an aqueous solvent. 020 (S) -ginsenoside Rh 2 isn n n A saponin mixture containing protopanaxadiol saponin such as ginsenoside Rb 1 , Rb 2 , Rc, Rd, or ginseng extract is reacted with a lactase and reacted with an enzyme selected from Ginase and beta-galactosidase in the reaction product It is also possible to manufacture by the method. According to the present invention, it is possible to obtain a large amount of 20 (S) -ginenoside Rh 2 of high purity within a short period of time in a simple manner.
