abstract |
The present invention provides a catalyst, glycolate oxidase ((S) -2-hydroxy acid oxidase, EC 1.1.3.15) and catalase (EC 1.11.1.6). The present invention relates to a method for producing pyruvic acid in which an enzymatic reaction between L-lactic acid and oxygen in an aqueous solution is involved. Without substantial enzymatic inhibition by the product, high purity (98% sodium salt) pyruvate can be obtained in high yield (eg 96%) at commercially acceptable concentrations (typically 0.5 M or less). |
