abstract The present invention relates to a method for producing low calorie structured lipids. The low calorie structure fat using the lipase of the present invention is a mixture of triglycerides containing short chain fatty acids and triglycerides containing long chain fatty acids or long chain fatty acids at 1: 0.5 to 2.0, most preferably 1: 1.4 (molar concentration ratio). It is prepared by adding a lipase and stirring in a thermostat maintained at a temperature of 60 ℃ to 90 ℃, more preferably 70 ℃ to 80 ℃ and reacting for 2 hours to 6 hours, more preferably 3 hours to 5 hours. In the method for producing low calorie structure fat using lipase of the present invention, since the reaction catalyst is harmless to the human body and no side reactions are generated, it is possible to easily obtain a desired product, so that the residual amount of harmful substances that are a problem in the chemical reaction does not become a problem. It is a reaction under the condition of normal temperature and normal pressure, so the energy consumption is low, and it is preferable also in the environmental aspect, and it can be efficiently used in the production of low-calorie structural fat.
