abstract | The present invention relates to a method for preparing an indigestible dextrin having high enzyme resistance. More specifically, the present invention relates to a method for preparing a high-enzymatic refractory dextrin by preparing heat-treated dextrin (pyrodextrin) using a starch material, followed by enzymatic treatment, filtration, decolorization, desalting and drying. The indigestible dextrin of the present invention is pre-drying the general starch with hot air, and then reacting a certain amount of anhydrous hydrochloric acid uniformly with the starch particles with a hot hot air and heat-treated for a certain time, then hot water is added thereto Prepared by dissolving the heat-treated dextrin and acting alpha-amylase, followed by filtration and decolorization, desalting and drying through ion-exchanged water, or after treatment with amyloglucosidase, activated carbon and glucose separation after alpha-amylase treatment. After the process, it was prepared by decolorizing, desalting and drying through activated carbon filtration and ion exchange resin. The indigestible dextrin prepared by the present invention possesses enzyme resistance to various enzymes, and it has been found that blood lipid concentration, blood sugar, and lipid content of liver tissues are lowered in rats, including drinks, ice cream, bread, sweets, and the like. It can be widely used as a functional material in various foods.
