The present invention isolates and identifies strains excellent in alcohol fermentation from pulp and stalks of decayed persimmon, and influences of pH, culture temperature, shaking speed, initial sugar concentration, and strains commercially used in YPD and extract medium. Saccharomyces cerevisiae YJK 20 is provided as a persimmon fermentation strain by comparing alcohol production. |
