The present invention relates to an aminopeptidase whose activity is increased in the presence of a high concentration of salt, and a method for preparing the same. The present invention provides an aminopeptidase produced by a novel strain of Bacillus sp. N2, KCTC 8819P. Since the peptide can be degraded in the presence of high salt, it can be widely applied to the food processing industry based on protein hydrolysis. |
