abstract The present invention relates to a method for purifying gardenia yellow, and more particularly, to adsorb the gardenia fruit liquid extracted using water or ethanol with bentonite with adsorbed gardenia yellow (Crosine, Crocine) and finally removing impurities with ethanol. The present invention relates to a method for purifying gardenia yellow pigment, which can completely purify the iridoid glycosides and polyphenols, which cause the greening of gardenia yellow pigment by deslying crosine.
