abstract This invention relates to vanillin-alpha-di-glucoside in which at least one sugar is bound in the form of alpha. This compound is non-volatile and the fragrance loss is reduced during storage or distribution when tobacco flavor is added, and the smell is released when smoking. This compound is prepared by reacting sugars with vanillin or ethylbarilin with an enzyme that transfers sugars to alpha in solvents. Cyclomaltotexturin glucanotransferase is used as an enzyme, and an acetate buffer solution or an organic solvent is used as a solvent.
