abstract | INDUSTRIAL APPLICABILITY The present invention reduces the taste and odor peculiar to milk, suppresses throat irritation and “malaise”, has a mild acidity, and/or milk proteins are less likely to aggregate or precipitate even at low pH, (EN) A vinegar-containing vinegar-containing beverage excellent in flavor balance, which does not impair the appearance, texture and throat even after storage for a certain period. The milk-containing vinegar-containing beverage of the present invention contains vinegar and milk and satisfies the following conditions (A) and (B). (A) The content of lactic acid per 100 mL of the beverage is 1 mg or more and 500 mg or less. (B) The content ratio by mass of free methionine to total methionine is 0.34 or more. |
