abstract | The processed food of raw red fish meat containing myoglobin of the present invention contains a phosphate and a salt of an organic carboxylic acid. The processed food further contains a reducing agent, and the myoglobin is preferably reduced myoglobin. The organic carboxylic acid is preferably citric acid, lactic acid or acetic acid, and is preferably a monovalent organic carboxylic acid. It is also preferable that the salt of the organic carboxylic acid is a sodium salt, a potassium salt or a calcium salt. It is also preferable that the red fish meat is composed of a mixture of a granular part and a paste-like part. |
