The present invention provides anion-modified cellulose nanofiber dispersions and compositions that do not color when heated. Specifically, the dispersion is selected from the group consisting of anion-modified cellulose nanofibers; borate salts, sulfites, and combinations thereof in an amount of 1 to 30% by mass based on the absolute dry mass of the anion-modified cellulose nanofibers. An anti-coloring agent, as well as a solvent. |
