abstract | The present inventors have examined suitable culture conditions for equol production using bacteria classified into the family Coriobacteriaceae and the family Streptococcaceae as an example of microorganisms. As a result, it has been clarified that the production efficiency of equol is dramatically increased when the mass percent concentration of hydrogen gas is 40 to 100% (particularly 100%) in the gas phase in which fermentation is performed. That is, the present inventors have succeeded in establishing suitable culture conditions in equol production using anaerobic microorganisms. |
