abstract | In the presence of an aldehyde, in the mixed solvent of water and an organic solvent, the steric configuration at the 2nd and 4th positions is simultaneous with the isomerization reaction at the 2nd position of monatin in which the configuration at the 2nd and 4th positions is different under the condition of pH 4-11. By crystallization of the same monatin or a salt thereof, monatin useful as a sweetener, particularly optically active monatin, is efficiently produced. |
