abstract PURPOSE: To lessen the contamination of slaughtered chicken bodies with the salmonellae, etc., on their skin by bringing the slaughtered chicken bodies into contact with an aq. acidic soln. contg. an effective amt. of surfactants, such as 8 to 18C alkyl sulfate, 1 to 15C alkylbenzenesulfonic acid, etc., or their salts for an effective period of time. CONSTITUTION: This method consists in lessening the contamination of the slaughtered chicken bodies with the bacteria, such as salmonellae and campylobacter, sticking to the skin surfaces of the slaughtered chicken bodies or forming colonies thereon. in the following manner: The slaughtered chicken bodies are brought into contact with the aq. acidic pH soln. contg. the anionic surfactants of the effective amt. selected from among the 8 to 18C alkyl sulfate, benzenesulfonic acid having preferably one or more 1 to 15C alkyl substituents, naphthalenesulfonic acid having preferably one or more 1 to 15C alkyl substituents and their salts. The pH of this aq. soln. is particularly preferably about 1.5 to about 2.5. The amt. effective for the surfactants to decrease the salmonellae is particularly about 100 to about 300ppm. The sterilization may be preferably executed at about 0 to about 60 deg.C.
