abstract PURPOSE: To obtain a spore-inactivating agent containing the combination of an amino acid or a synergistic action agent with a bacterium-lysing enzyme product having an N-acetylmuramidase activity as active ingredients, and useful for protecting materials which may be injured by the invasion of bacteria. CONSTITUTION: This spore-inactivating agent contains the combination of (A) an amino acid (e.g. cysteine, alanine, tyrosine, glycine) or (B) a synergistic agent (e.g. an amino acid, a complexing agent, a phosphate, a flavor-reinforcing agent, a reddening agent) with a bacterium-lysing enzyme product having an N-acetylmuramidase activity (e.g. originated from a bacterium belonging to the genus Streptomyces) as active ingredients. The spore-inactivating agent can elongate the storage lives of materials (e.g. meats, fishes, vegetables, milk products, confections, medicines, cosmetics, tobacco) which may be injured by the invasion of bacterial spores, and is added so that the component A is present in a concentration of 10-5,000ppm or that the component B is present in a concentration of 0.01-1.5wt.%.
