abstract | PURPOSE: To obtain an immobilized debranching enzyme, by using a debranching enzyme capable of hydrolyzing α-1,6-glucoside bond in starch and immobilizing the enzyme to a slightly acidic porous adsorbent resin, a weakly cation exchange resin, a phenolic adsorption resin, a porous chitosan, etc. n CONSTITUTION: A debranching enzyme such as pullulanase produced by Bacillus acidopulluliticus, Klebsiella pneumoniae, etc., or isoamylase produced by Pseudomonas amyloderamosa, microorganism belonging to Cytophaga genus, etc., is immobilized e.g. by contacting said enzyme with a carrier comprising a duolite resin, granular porous chitosan, etc., in a buffer solution to obtain an immobilized debranching enzyme having an immobilization ratio of ≥90% and an expression activity of 40W2,000 unit per 1g of wet carrier.
