abstract PURPOSE: To produce the titled enzyme inexpensively and efficiently, by adjusting wheat flour or undenatured raw gluten fractionated from the wheat flour to a proper pH, dispersing, treating the dispersion protease or not and using the dispersion or further purifying. n CONSTITUTION: Undenatured gluten is blended with a buffer solution of acetic acid, lactic acid, etc., adjusted to pH 4W5.5 and dispersed. In the operation, addition of sodium hydrogensulfite, etc., reduces viscosity of the gluten. After the dispersing the over, the dispersion is directly dried or part of the solution subjected to salting-out is partially collected or pH of the dispersion is simply returned to 7, only the solution part is partially collected and the collected solution is properly treated by ultrafiltration concentration, vacuum drying, spray drying, etc., to give the aimed enzyme. Or, the undenatured gluten is dispersed and then treated with acidic neutral protease to give the enzyme. Further wheat flour is blended with five times as much as water, the suspension is directly treated with protease or with three times as much as water, adjusted to pH 4.5W4.8 and treated with protease or not so that the aimed enzyme can be obtained. n COPYRIGHT: (C)1988,JPO&Japio
