abstract PURPOSE: To prepare a milk drink having excellent storage stability, suppressing the generation of ring phenomenon, by adding a glycerol succinic acid fatty acid ester as an emulsifier. n CONSTITUTION: The objective milk drink is prepared by using a glycerol succinic acid fatty acid ester as an emulsifier. The glycerol succinic acid fatty acid ester is a mixed ester of glycerol, fatty acid and succinic acid, for example, a glycerol fatty acid ester derivative produced by esterifying a glycerol fatty acid ester with succinic acid. The fatty acid is preferably a saturated acid having a carbon number of about 12W22. The emulsifier may be used singly or in combination with other food emulsifier, stabilizer, etc. The amount of the emulsifier is e.g. 0.1W1wt.% based on the milk drink.
