PURPOSE: To improve emulsifying ability, foaming ability and ton elevate stability for storage by compounding a crystalline α-maltose to a compounding emulsifier contg. an interface active agent, transforming the α-maltose to a crystalline β-maltose hydrate and pulverizing. n CONSTITUTION: The compounding emulsifier in liquid or paste form contg. the interface active agent selected among sucrose-fatty acid ester, glycerine-fatty acid ester and solbitan-fatty acid ester is prepared. After the compounding emulsifier is allowed to contain the crystalline α-maltose, the powdery compounding emulsifier is produced by transforming the α-maltose to the crystalline β-maltose hydrate and pulverizing. In this occasion, the compounding emulsifier in liquid or paste form is preferably transformed to powder by allowing the emulsifier top contain the crystalline α-maltose, transforming the α-maltose to the crystalline β-maltose hydrote by maturing at 20W70°C for about 0.1W5 days, and pulverizing. n COPYRIGHT: (C)1988,JPO&Japio |
