abstract | PURPOSE: To obtain in high yield the titled compound useful as a food extender, etc., by treating amylase G4 of the genus Bacillus, forming mainly maltotetraose from starch with startch, amylose, amylopectin, glycogen or its partial hydrolyzate. n CONSTITUTION: A bacterium [e.g., Bacillus circulans G4(FERM P-820), etc.,] belonging to the genus Bacillus, capable of producing amylse G4, is cultivated in a medium, centrifuged to remove molds, etc., and a supernatant liquid is collected to give amylase G4 of the genus Bacillus.
