abstract PURPOSE: To obtain the titled substance, having mellow sweetness, rapid development of sweetness as well as sharp residual taste and useful as a food sweetener, etc., by reacting an aqueous solution containing glycyrrhizin and a starchy substance with cyclodextrin glucanotransferase. n CONSTITUTION: An aqueous solution containing normally 0.1W25wt% glycyrrhizin and normally 1W50wt% starchy substance is reacted with cyclodextrin glucanotransferase normally at 3W10pH and 20W80°C to afford the aimed α- glycosylglycyrrhizin having an equimolar amount or more of α-glycosyl residues linked to the glycyrrhizin. n COPYRIGHT: (C)1987,JPO&Japio
