abstract | PURPOSE: To safely obtain cinnamic acid useful as a raw material for L- phenylalanine, etc., at a low cost, without using hazardous peroxides and expensive silver catalyst, etc., by treating cinnamaldehyde with microorganisms belonging to Pseudomonas genus or its extracted product. n CONSTITUTION: Cinnamic acid can be produced by treating cinnamaldehyde with microorganisms belonging to Pseudomonas genus, Arthrobacter genus, Corynebacterium genus, Rhodotorula genus, Sporobolomyces genus, Alcaligenes genus or Cellulomonas genus or with an extracted product of said microorganism.
