abstract PURPOSE:To produce the titled optically active substances under a mild condition, by treating an dl-aryloxyacetaldehyde cyanohydrin carboxylate with a bacterium or a bacterium derived esterase. CONSTITUTION:A microorganism belonging to the genus Arthrobacter, Candida or Pichia capable of asymmetrically hydrolyzing a dl-aryloxyacetaldehyde cyanohydrin carboxylate (I) under an aerobic condition and a culture solution thereof, a stationary mold or an esterase separated from the mold is collected. The compound (I) of substrate is blended with the mold, culture solution, esterase, etc., to form an optically active aldehyde cyanohydrin and an optically active aldehyde cyanohydrin carboxylate. The isolation of the aimed substance is carried out by filtration, column chromatography, etc.
