PURPOSE: To obtain pickled plum fruit remarkably enriched with vitamin C, by adding acerola or its treated product to plum during the production process of pickled plum. n CONSTITUTION: Unripe or ripe fruit or fresh or aged leaf of acerola (a plant of Malpighia genus; Malpighia punicifolia) or their treated product such as crushed product, juice, juice residue, extracted liquid, concentrate, paste, dried product, etc., is added to plum at arbitrary stage during the production process of pickled plum food (e.g. dried and pickled plum, pickled plum, plum pulp paste, sweetened plum paste, etc.). n COPYRIGHT: (C)1987,JPO&Japio |
