abstract | PURPOSE: To produce an L-tryptophan (derivative) in high efficiency on an industrial scale, by reacting an indole (derivative) with a pyruvic acid ester and ammonium ion in the presence of a cultured product of a specific microorganism. n CONSTITUTION: A microbial strain belonging to Proteus genus, etc. (e.g. Proteus rettgeri IFO 13501) is cultured in a medium containing glucose, urea, NaCl and, if necessary, 0.01wt% tryptophan (derivative), etc. The cultured product is mixed to an aqueous medium (water-containing organic medium) containing 0.1W10wt% indole compound (derivative) of formula I (R 1 is H, hydroxyl, alkyl, etc.), 0.1W10wt% pyruvic acid ester of formula II (R 2 is alkyl, allyl, etc.), 0.1W10wt% ammonium ion (e.g. NH 4 Cl) and, if necessary, 0.01W1wt% pyridoxalphosphoric acid, etc., and made to react at 10W40°C and 7W9.5pH.
