titleOfInvention Production of composition containing large amount of fructooligosaccharide
abstract PURPOSE:To obtain a composition containing large amount of fructo oligosaccharide useful in the field of food, in high efficiency, in a short time, by carrying out a specific operation in the reaction of sucrose with a fructose invertase, thereby decreasing the amount of by-produced glucose. CONSTITUTION:Saccharomyces cerevisiae is cultured in a medium composed of glucose, yeast extract, etc., to obtain microbial cell (A) capable of assimilat ing glucose and free of the capability to decompose sucrose and fructooligosaccharide. A reaction liquid (B) is produced by mixing a solution containing 5-70wt% sucrose with 0.08-300 unit (based on 1g of the sucrose) of an enzyme for the fructose inversion reaction (1 unit corresponds to the activity to produce 1mu mole of GF2 in 1min of the enzymatic reaction) and 0.01-10g of the above component A (wet cell) and is made to react at 25-65 deg.C and 4-8pH. After the completion of the reaction, the component B is heated to deactivate the enzyme and the microorganism. The microbial cells are re moved e.g. by centrifugal separation, and the obtained filtrate is subjected to decoloration, desalting and concentration to obtain the objective composition containing a large amount of fructooligosaccharide.
