abstract | PURPOSE: To produce an N-acetylchitooligosaccharide of a pentamer or more molecules of a monomer efficiently, by treating a substrate such as a chitin partial hydrolyzate, N-acetylchitooligosaccharide, etc., with a specific chitinase. n CONSTITUTION: A substrate such as chitin partial hydrolyzate, N- acetylchitooligosaccharide, etc., is treated with a chitinase produced by a bacterium (e.g., Nocardia orientalis) belonging to the genus Nocardia and an N- acetylchitooligosaccharide of a pentamer or higher molecule of a monomer is efficiently produced by saccharide rearrangement reaction. The N- acetylchitooligosaccharide of pentamer or more molecules of monomer is used as a substrate for measuring lysozyme or β-N-acetylglucosaminidase in clinical test drug.
