abstract PURPOSE: To readily obtain cinnamic acids without using an organic solvent, by reacting an alkyl cinnamate ester with an alkali in a heterogeneous two- phase liquid system using a water as a solvent, followed by adding an acid to thus obtained aqueous solution of alkali salt of the cinnamic acids. n CONSTITUTION: Cinnamic acid esters expressed by the formula (R 1 represents H, halogen atom, alkyl, OH, etc.; R 2 and R 3 represent H or alkyl; R 4 represents alkyl or alkenyl) are reacted with an alkali (preferably NaOH, etc.) in a heterogeneous two-phase system using a water as a solvent at 60W100°C and an acid (example; hydrochloric acid, sulfuric acid and phosphoric acid) is added to thus obtained aqueous solution of an alkali salt of the cinnamic acid after recovering an alcohol to obtain cinnamic acids. The amount of the water to be used is controlled so that a concentration of the alkali salt of cinnamic acids in the aqueous solution comes into 1W20wt% range and the concentration of produced cinnamic acids is maintained at 1W25wt%.
