abstract | PURPOSE: To produce the titled substance which becomes a raw material for artificial sweeteners in high yield, by reacting ammonia in a specific concentration or more with cinnamic acid in a specific concentration or less in the presence of an enzyme in a reaction solution consisting of the ammonia and carbonic acid ions. n CONSTITUTION: L-Phenylalanine ammonia-lyase produced by a microorganism belonging to the genus Rhodosproidium, Rhodotorula or Sptreptomyces is used. Ammonia is reacted with cinnamic acid in substantially ≤0.05mol/l concentra tion in the presence of the above-mentioned enzyme in a reaction solution consisting of the ammonia in ≥10mol/l concentration and 0.05W0.5 equivalents, based on the above-mentioned amount of the ammonia, carbonic acid ions. The use of the buffer solution consisting of the ammonium carbonate as the reaction solution permits the stable maintenance of the L-phenylalanine ammo nia-lyase activity, and the aimed L-phenylalanine can be produced in high yield and readily isolated from the solution after completing the reaction. n COPYRIGHT: (C)1986,JPO&Japio |
