abstract PURPOSE: To produce pyruvic acid at a low cost, by adding an aminopolycarboxylic acid-type chelating agent to a reaction system for the production of pyruvic acid from L-tartaric acid in the presence of cultured product of microorganism containing L-tartaric acid dehydratase. n CONSTITUTION: A microorganism containing L-tartaric acid dehydratase and belonging to Pseudomonas genus, e.g. Pseudomonas putida, Pseudomonas espi, etc., is cultured, and pyruvic acid is produced and accumulated from L-tartaric acid or its salt in the presence of the cultured product or its treated product. The yield of pyruvic acid is improved by adding an aminopolycarboxylic acid- type chelating agent such as ethylenediaminetetraacetic acid, diaminopropanoltetraacetic acid, glycol ether diaminetetraacetic acid, etc., to the reaction system.
