abstract PURPOSE: To obtain the titled substance (α-APM) useful as a sweetener, with simple process, in high yield and quality, by a specific method using an α,β-mixture of N-formyl-L-aspartyl-L-phenylalanine as a raw material. n CONSTITUTION: An N-formyl-α-L-aspartyl-L-phenylalanine containing 5W30% β-isomer is treated with an acid (e.g. hydrogen chloride) in methanol preferably at 20W60°C for 1W30hr to effect the deformylation and diesterification. The produced L-aspartyl-L-phenylalanine dimethyl ester is hydrolyzed with hydrochloric acid preferably at 10W40°C usually for 1W10 days. The amount of the hydrochloric acid is preferably 1W5mol based on 1mol of the α,β-mixture used as the raw material. The objective α-APM can be produced by neutralizing the precipitated α-APM hydrochloride with sodium carbonate, etc. n COPYRIGHT: (C)1986,JPO&Japio
