abstract PURPOSE: To obtain the titled food having smooth sense of eating and excellent water retaining property and affinity for other food materials, by finely dividing fish meat, reacting a proteolytic enzyme with the finely divided fish meat at a specific pH, and denaturing proteins in the fish meat. n CONSTITUTION: The pH of fish meat is adjusted to 2W6 or 7W9 after or while finely dividing the fish meat, and a proteolytic enzyme, e.g. acrosin, or a microorganism, e.g. yeast of the genus Torula, capable of digesting proteins or both are reacted with the resultant fish meat to give the aimed food containing the proteins having changed physical properties in the fish meat.
