abstract PURPOSE: To produce granular palatinose having porous texture and excellent feeling to the tongue, dispersibility and solubility, by fluidizing a nucleus-forming powdery substance with a solidifying gas of specific temperature, spraying a solution of palatinose to the fluidized powder, and drying the product. n CONSTITUTION: For example, the hot-air temperature of a spray-drier is adjusted to e.g. ≤45°C (preferably 38W42°C) at the inlet of the hot air, and the nucleus-forming powdery substance (e.g. powdery palatinose) is fluidized with a solidifying gas. A solution of palatinose having a concentration of ≤60% (preferably 45W55%) is sprayed to the fluidized substance and dried to obtain the objective palatinose.
