abstract PURPOSE: To prepare efficiently xylitol, by immobilizing a microorganism having the ability to produce xylitol in a gelatinous carrier, and subjecting the immobilized carrier to contact reaction with a saccharide liquid. n CONSTITUTION: A microorganism, belonging to the genus Candida, Trichosporon, Rhodosporidium or Saccharomyces, and having the ability to produce xylitol is immobilized in a gelationus carrier, e.q. sodium alginate, k-carrageenan or polyacrylamide. The resultant immobilized microorganism is then continuously subjected to contact reaction with a 1W10% xylose solution to produce xylitol.
