abstract PURPOSE: The titled aqueous solution, obtained by adding a salt of an aminocarboxylic acid or salt of an oxycarboxylic acid to an aqueous solution of ethyl alcohol and acetic acid, and capable of removing the astringency well from even astringent persimmons from which the astringency cannot be easily removed and giving fresh persimmons, having strong sweetness and high hardness, and free from the stringency nor alcohol discoloration. n CONSTITUTION: A ternary aqueous solution for removing the astringency obtained by adding 0.001W0.05mol acetic acid and 1W5mol, based on the above- mentioned acetic acid, salt of an aminocarboxylic acid, e.g. sodium glutamate, or salt of an oxycarboxylic acid, e.g. sodium L-ascorbate, to one mol ethyl alcohol, and preparing the resultant solution to give a 20W40% aqueous solution. n COPYRIGHT: (C)1985,JPO&Japio
