abstract | PURPOSE: To obtain an ester hydroxylase of pectin, having specific physical and chemical characteristics, and exhibiting the physiological activities such as fermentation of sugar, assimilation of carbon compounds, proliferation in a vitamin-less and amino acid-less medium. n CONSTITUTION: An ester hydroxylase of pectin having the following physical and chemical characteristics. (A) Activity and substrate specificity; hydrolyzes the ester group of pectin to carboxyl group. (B) Optimum pH; 3.0W6.0. (C) Stable pH range; 2.0W7.0. The enzyme can be obtained by culturing Aureobasidium pullurans AY-037 strain belonging to the budding conidium group of Oidiomycetes Imperfecti.
