abstract | PURPOSE: To obtain a sweetener composition having improved stability, solubility and decomposition resistance of aspartame sweetener, by mixing α-L-aspartyl-L- phenylalanine methyl ester with cyclodextrin in the presence of water. n CONSTITUTION: The objective sweetener composition is prepared by mixing α-L- aspartyl-L-phenylalanine methyl ester (aspartame) with cyclodextrin in the presence of water and/or an aqueous solvent, and if necessary, drying the mixture. The cyclodextrin is called as α-cyclodextrin, β-cyclodextrin of γ-cyclodextrin according to its polymerization degree, and can be used separately or as a mixture.
