abstract PURPOSE: To prevent contamination by various bacteria, and to grow only the desired yeast well, by cultivating a yeast having resistance to sulfurous acid in a medium comprising a carbohydrate as a carbon source, having a given concentration of sulfurous acid. n CONSTITUTION: A given object of a mold selected from yeasts belonging to the genus Candida, Saccharomyces, Debaryomyces, etc. is successively cultivated in a mudium having a gradually increasing concentration of sulfurous acid, to prepare a yeast having resistance to sulfurous acid in a medium having ≤50,000ppm concentration of sulfurous acid. The prepared yeast having resistance to sulfurous acid is cultivated in a medium (i) using a carbohydrate, hydrocarbon, alcohol, organic substance, etc. as a carbon source, (ii) having 50W50,000ppm concentration of sulfurous acid. n COPYRIGHT: (C)1984,JPO&Japio
