abstract | PURPOSE: A natural antioxidant having improved antioxidizing effect on foods, perfume, etc., obtained by treating a substrate comprising a vegetable oil substance (extraction residue), etc. or its blend with a carbohydrate substance with a mold of the genus Aspergillus. n CONSTITUTION: A nontoxic mold of the genus Aspergillus (e.g., Aspergillus oryzae, A. sojae, A. niger, etc.) is sterilely inoculated into a substrate[glucide: protein =(0.5:1)W(5.0:1) (weight ratio), preferably (1:1)W(3.0:1)]comprising a vegetable oil substance (a substance such as a fruit body or germ of a plant, or a saccharide, e.g., soybean, etc.), a residue of its extraction (e.g., defatted soybean, etc.), a residue of its extraction and purification (e.g., lecithin, etc.), their mixtures, or their blends with a carbohydrate substance, and cultivated for about three days to give an antioxidizing component, from which a natural antioxidant is obtained. n COPYRIGHT: (C)1982,JPO&Japio |
