PURPOSE: To obtain a branching enzyme capable of being mass-produced by a bacterium belonging to the genus Bacillus without the activating action by citric acid or glucose-1-phosphoric acid. n CONSTITUTION: A bacterium, belonging to the genus Bacillus, and having the ability to produce a branching enzyme is cultivated in a nutrient culture medium to produce the branching enzyme, which is then collected.
