abstract | PURPOSE: An adequate amount of devile tongue flour is added to warm water and then an appropriate amount of a grain flour such as rice, buckwheat or millet is added thereto and mixed, coagulated by adding a coagulating agent to impart the devile tongue a taste of rice cake, buckwheat or corn. n CONSTITUTION: An adequate amount of devile tongue flour is stirred together with warm water and combined with an appropriate amount of a grain flour such as rice, buckwheat, millet, foxtail millet or corn. Further, a coagulating agent is added thereto and the mixture is poured into a mold of desired shape, coagulated, boiled in hot water to give the objective devile tongue with flexibility. This process gives various kinds of devil tongue products, e.g., showing strong taste of devil tongue, or rice cake, buckwheat or corn taste.
