abstract PURPOSE: To obtain a frozen food block which can be thawed uniformly in a short time without loss of the food such as breaking, peeling, etc., by coating the surface of each food with an aqueous solution of an organic acid alkali salt, and freezing the foods in a block. n CONSTITUTION: A binder (e.g. gum arabic, starch, methyl cellulose, etc.) is dissolved in an aqueous solution of an organic acid alkali salt (e.g. sodium acetate, sodium malate, sodium citrate, etc.).
