abstract | PURPOSE: A stable water-insoluble immobilized lactase having a high hydrolyzing ability of lactose, obtained by adsorbing a lactase originating in Aspergillus oryzae on a specific macroporous phenol-formaldehyde amphoteric ion-exchange resin. n CONSTITUTION: A lactase which originates in Aspergillus oryzae and has an optimum pH of 4.5W5.0 and a Km value of 0.1±0.05mol/l (lactose substrate pH4.5, 40°C) is adsorbed on a macroporous phenol-formaldehyde amphoteric ion-exchange resin which has a specific surface area ≥1m 2 /g, the total pore volume ≥0.1cc/g based on macropores of pore diameter 100W2,000Å, an anion exchange capacity ≥1meq/g based on an (substituted) amino group, a cation exchange capacity ≥0.5meq/g based on a carboxymethyl group and a particle size of 12W60 mesh to give an immobilized lactase.
