abstract PURPOSE: To obtain a stable emulsion by a method wherein the oil in water type emulsion is prepared in such a manner that an acid, a base, a salt, a vegatable cellular polysaccharide or the like are interposed and an interfacial viscosity of said emulsion is adjusted to a specific value or more. n CONSTITUTION: In preparing the oil in water emulsion from water and an oil or fat, one or more of an acid, a base and a salt such as sodium chloride or calcium chloride, a third substance such as a microorganism polysaccharide such as β-glucan or the like or a polysaccharide from a vegetable cell wall are interposed and an interfacial viscosity of said emulsion is adjusted to 10 surface poise or more. Then, the obtained emulsion has good stability and, if allowed to stand for a long period, coagulation and syneresis of a dispersed phase are not generated hardly. n COPYRIGHT: (C)1981,JPO&Japio
