abstract | PURPOSE: Title pigment preparation that is prepared by adding less than the equivolume of a flavone or flavonol solution to anthocyan pigment, thus developing readily color, having high color value and chroma, therefore being used for coloring food. n CONSTITUTION: A flavone compound, such as apigenin, primetin, baicalin, wogonin, etc., and/or a flavonol compound, such as galangin, datiscetin, kaempferol, etc., are dissolved in a nontoxic solvent as water, propylene glycol, or glycerol in an amount less than that forming the saturated solution. The resulting solution is added to anthocyanin pegments, such as pelargonidin, cyanidin and delphinidin, as a modifier, in an amount of less than the equivolume, thus producing the objective anthocyan pigment preparation.
