abstract PURPOSE: Novel sweetener that is prepared by adding sucross fatty acid esters of higher monoester content to sucrose, thus showing high tooth decay prevention effect because it inhibits the formation of acids causing tooth decay from sucrose by bacteria in mouth. n CONSTITUTION: Sucrose is combined with about 0.02W20wt% of sucrose fatty acid esters in which the content of monoesters is 60W100wt% and the fatty acids are saturated or unsaturated ones of 8W22 carbon atoms to give the objective sweetener. Examples of the sucrose fatty acid esters are sucrose caprylate, sucrose laurate, sucrose myristate, sucrose plamitate, sucrose stearate, sucrose oleate or sucrose linoleate. the sucrose is impregnated with these esters or mixed with them to inhibit the formation of acids by the action of bacteria in mouth, e.g., Streptococcus mutans. n COPYRIGHT: (C)1980,JPO&Japio
