abstract PURPOSE: An unsaturated carbonyl compound bearing a double bond on the side chain is catalytically reduced in the presence of an activated nickel catalyst prepared by specifically treating a Raney alloy to give a compound in which only double bond on the side chain is saturated, e.g., zingerone, useful as a spice. n CONSTITUTION: An unsaturated carbonyl compound bearing a double bond on the side chain, e.g., vanillidene of formula I or α-ionone of formula II, is catalytically hydrogenated in the presence of an activated nickel catalyst obtained by treating a Raney alloy below about 100°C under conditions of normal pressure and normal temperature to saturate only the double bond on the side chain, thus producing the corresponding product, e.g., zingerone or dihydro-α-ionone. The activated nickel catalyst is obtained by adding an aqueous sodium hydroxide to a Raney nickel of alloy W 1W7 in a proportion of more than 3 equivalent to 1 equivalent of the alloy, preferably treating them at 100W80°C.
