abstract (57) [Summary] [Solution] Sucrose fatty acid excellent in water solubility, dissolves rapidly in cold water without heating, and stably dissolves without turbidity or precipitation even when the aqueous solution is cooled and stored for a long time. Provided are an ester composition and transparent drinking water containing the composition. SOLUTION: (a) 95-99% by weight of a sucrose fatty acid ester having a monoester content of 90% by weight or more, which comprises a saturated and / or unsaturated fatty acid having 12 to 22 carbon atoms, and (b) a fatty acid A sucrose fatty acid ester composition comprising 5 to 1% by weight of an ionic surfactant selected from a lactate salt, a hydroxycarboxylic acid monoglyceride and a lecithin compound, and 50% by weight of the composition. Transparent drinking water containing from ppm to 2% by weight.
