abstract | (57) [Summary]nThe present invention relates to a process step for slime removal when producing edible oils, wherein the vegetable oil in which the hydratable phosphatides have been sufficiently removed by slime removal with advantageously pre-connected water is converted by enzymatic treatment. Non-hydratable phosphatides are removed to the extent that the vegetable oil can be physically refined. An important feature of the invention is the use of a phospholipase from an Aspergillus strain. This method is gentle, cost-saving and environmentally friendly. |
