abstract | (57) Abstract: Provided is an improved method for preparing crystallized maltulose. SOLUTION: The preparation of an aqueous solution of maltulose having a concentration of about 65% by weight; concentrating the aqueous solution of maltulose to a dry matter content of more than 50% by weight at a temperature such that the degree of maltulose supersaturation is less than 1; Cooling the concentrated solution to transfer the maltulose supersaturation; crystallizing the maltulose in the supersaturated solution by cooling it at a controlled rate and by stirring; and the maltulose thus obtained. A method for preparing crystallized maltulose monohydrate, comprising separating, recovering and drying hydrate crystals. |
